We spoke with New York floral designer Rachel Cho to get a look inside her studio as her team hustles to get ready for Valentine’s Day. For Rachel and her crew, Valentine’s Day brings a whole different picture to mind––when the big day comes, they trade the pinot for pruners.
“I don’t actually remember a time when I’ve celebrated Valentine’s Day the day of,” says Cho. “Growing up in my mom’s flower shop, Valentine’s Day has always equated with work.”
While the holiday requires plenty of effort, there’s nothing Rachel and her merry band of florists get more excited about than making extra special bouquets for their Valentine’s Day customers. “We love having a color palette to work with so we can surprise people with flower varieties,” says Rachel.
She and her New York-based team are the artisans behind Bouqs like Grace, Rustic, and Romantique. As these floral experts get ready for one of the biggest holidays of the year, Rachel readily admits that preparing for Valentine’s Day is a challenge, and for a reason we might all sheepishly admit to: procrastination.
In an effort to estimate what their needs will be for the occasion, her team examines last year’s orders as a guide. To no one’s surprise, roses are one of the most popular flower varieties this time of year. Rachel makes sure to stock up on these timeless stems, and her customers can anxiously await a heartfelt creation––roses are also one of her favorite blooms.
While we were chatting with a true expert, we made sure to ask Rachel what else is trending this year. We were so excited when she mentioned some lesser talked about varieties that are making a comeback, like carnations, wax flowers, and baby’s breath. (We love a good industry tip!)

While spending Valentine’s Day in the floral studio requires a lot of hard work, the time and dedicationspent pays off in unexpected ways, like the year her mom got a surprise from a stranger.
“I remember a time when a customer came in buying Valentine’s Day bouquets for family and then asked my mom, Sharon, to make one more. After she handed it to him he handed it back to her and said, ‘Happy Valentine’s Day, Sharon.’”
